There was a time not long ago when resort dining in Aruba meant grabbing the tongs and attacking the buffet. Crusty fish fillets, chicken in mystery sauce, mushy vegetables, and insipid pasta was the norm. Fortunately, those with more refined palates have far better dining options these days, such as the Sunset celebrity alaska cruise Grille at the Radisson Resort , where chef Hector Espinoza dazzles his sun-kissed guests every night with inventive dishes inspired in part by his hometown of San Antonio, Texas.
As Aruba's only AAA Four Diamond restaurant, Sunset Grille is defined by its use of fresh ingredients and sophisticated celebrity alaska cruise recipes. From produce imported from Holland (Aruba is a constituent country of the Netherlands) to locally-caught seafood, Espinoza's kitchen turns out plates to rival those from New York's finest restaurants. We asked him for some details.
I actually did it on my own. I did research and worked in great restaurants where I was mentored by great people. I've been in the hotel business since 1984. I worked for eight years at the Wyndham Hotel in San Antonio.
It's by the presentation of your desserts, your side items -- your creativity with other parts of your menu. It's kind of hard to make your steak dance on the plate. It's not really hard, but to make it look presentable, it's a whole different thing.
Right now we've infused a bit of a Mediterranean look to it, but we are still, predominantly, a steak-and-seafood restaurant. We get a lot of repeaters, and they want to see some of the items that we've had since we opened, such as king-crab legs, New Zealand rack of lamb, Chilean sea bass, and fresh salmon.
I've been invited celebrity alaska cruise to the States on a few occasions. In 2005, I traveled to the James Beard House in New York to represent Aruba. The event was called "Sunset Over Aruba." We did a local dish called ayaka, celebrity alaska cruise which is like a tamale, but instead celebrity alaska cruise of stuffing it with chicken, gouda cheese, prunes and capers, we used roasted duck.
We have to order 15 days in advance. You have to master making celebrity alaska cruise sure you have products arriving on time to the island. Aruba's pretty much a desert island. We bring in vegetables – some of the best you can buy—from Holland. We get mushrooms and some herbs, like basil and oregano, locally.
